Corn Tortilla Basket with Zambos Plantains

Ingredients

• 1 cup sweet corn
• ½ cup red onion
• ½ cup chopped cilantro
• 1 cup chopped tomato
• 2 tablespoons cream butter
• 1 family-size bag of Zambos Plantains
