Step 1: Preheat the oven to 375°F. To prepare the dough, place the margarine, flour, salt and sugar in a food processor.
Step 2: Process a little at a time until you have a sandy consistency.
Step 3: Add the water little by little while the processor is running.
Step 4: When a homogeneous dough is formed, remove from the processor.
Step 5: Wrap in plastic wrap and refrigerate for 30 minutes.
Step 6: Meanwhile, prepare the filling by mixing the first 5 ingredients with an electric mixer until well blended.
Step 7: Add the 3/4 cup of crushed peanuts and stir with a spatula.
Step 8: On a clean, floured surface, flatten the dough with a rolling pin into a circle.
Step 9: Place in a greased pie pan and fold over the edge. Pour the filling over the dough and sprinkle the Omega Mix on top.
Step 10: Bake for 40 to 45 minutes or until the crust is crisp and beginning to brown and the filling is set.
Step 11: Cool completely to room temperature and then refrigerate for 2 hours before serving.
