Step 1. Heat 2 tablespoons of oil in a nonstick skillet and sauté the onion over medium-low heat until translucent, about 8 minutes. Remove from the skillet and set aside.
Step 2. In a separate bowl, beat the eggs with a whisk. Break the chips into small pieces and add them to the eggs. Add the onion, milk, and mix well to combine.
Step 3. Heat the remaining oil over medium-high heat in the same skillet used for the onion. Pour in the mixture and reduce the heat to medium, cover, and let it set on that side. Flip with the help of a lid or plate. Cook for about 2–3 minutes on each side.
