Roasted Cauliflower with Yummi Sauce

Ingredients

  • 1. Ingredients for the cauliflower:
  • 1 large cauliflower
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 2. Ingredients for the cashew sauce:
  • ½ cup salted cashews
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 4 tablespoons water
  • 1 teaspoon cumin powder
  • 1 clove garlic, minced
  • Pinch of cayenne pepper
  • 3. Ingredients for serving:
  • Peanuts with Chile Toreado
  • Chopped cilantro

Preparation

    Step 1: Preheat the oven to 425º F and line a baking sheet with baking paper. Cut the cauliflower into 1 ½ " slices.

    Step 2: Brush with olive oil on both sides and season with salt and pepper.

    Step 3: Place the slices on the tray and cover them with aluminum foil. Bake for 5 minutes.

    Step 4: Remove the foil and roast for 10 minutes, turn them over and roast for 7 minutes more.

    Step 5: While the cauliflower slices are baking, soak the cashews in water for 15 minutes.

    Step 6: Drain and place them in a blender.

    Step 7: Add the rest of the ingredients and blend until smooth.

    Step 8: Serve the sauce with the cauliflower steaks and add fresh cilantro on top.
