Tacos del Rancho

Ingredients

  • Ingredients for the tacos:
  • 10 corn tortillas
  • 1 bag of Del Rancho® Chicharrón® (pork rinds)
  • Chopped fresh cheese
  • Spread the tortillas with the avocado sauce, add the chicharrones, crown with the onions and serve.
  • For the cured onions:
  • 1 red onion, julienned
  • ¼ cup white vinegar
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Mix all ingredients in a bowl and let macerate for 30 minutes.
  • For the avocado sauce:
  • 2 avocados
  • 1 garlic clove
  • 1/3 cup cilantro
  • 2 tablespoons mayonnaise
  • Juice of 2 lemons
  • Salt and pepper to taste
  • Place all ingredients in a food processor and process until smooth.
