Ingredients for the tacos:
10 corn tortillas
1 bag of Del Rancho® Chicharrón® (pork rinds)
Chopped fresh cheese
Spread the tortillas with the avocado sauce, add the chicharrones, crown with the onions and serve.
For the cured onions:
1 red onion, julienned
¼ cup white vinegar
Juice of 1 lemon
Salt and pepper to taste
Mix all ingredients in a bowl and let macerate for 30 minutes.
For the avocado sauce:
2 avocados
1 garlic clove
1/3 cup cilantro
2 tablespoons mayonnaise
Juice of 2 lemons
Salt and pepper to taste
Place all ingredients in a food processor and process until smooth.
