Step 1. In a bowl, beat the eggs with salt and pepper using a fork or whisk. In another bowl, mash the potatoes well, add the salt, pepper, Zambos, and parsley. Mix everything together and gradually add the beaten eggs. Add the tuna and onion, making sure everything is well combined.
Step 2. Put some flour on your hands and shape the mixture into patties of the desired size. Coat them with flour and place them separated on a tray or Pyrex dish. Heat enough oil in a skillet, and once hot, reduce the heat to medium and fry the patties on both sides until golden brown.
Step 3. Serve hot with your favorite garnish or sauce.
