Kale Salad with Peanut Vinaigrette

Ingredients
- 1. Ingredients for the salad:
- 6 cups fresh kale
- 4 cups of cabbage
- ¼ red onion, julienned
- ¼ cup chopped cilantro
- ½ cup feta cheese
- ¼ cup roasted chile peanuts
- ¼ cup Japanese peanuts
- 2. Ingredients for the vinaigrette:
- 1 tablespoon apple cider vinegar
- 1 tablespoon rice vinegar
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 1 tablespoon honey
- ¼ cup salted peanuts
- ¼ cup salted cashew nuts
- Salt and pepper to taste
- 2 tablespoons sesame oil
- 2 tablespoons olive oil
Preparation

Step 1: For the salad, mix all ingredients in a serving bowl and toss.

Step 2: To prepare the vinaigrette, place all the ingredients in a food processor and process to the right consistency.

Step 3: If it is too thick for your taste, you can add more water.
