Step 1. Place a portion of ground beef directly onto each tortilla and press it down to form a thin layer covering almost the entire surface.
Step 2. Season with salt and pepper.
Step 3. Heat a skillet or griddle over medium-high heat with a little oil. Place the taco meat-side down, pressing lightly to achieve the smashed effect.
Step 4. Cook until the meat is well browned, then flip.
Step 5. Place Cappy Gorditos Queso chips on top of the meat and cook for a few more seconds until they slightly melt.
Step 6. Remove from heat and add pickled onions, crema, and fresh cilantro.
